Incredibly Soft and Moist Chocolate Chip Muffins!

This is a fantastic recipe and makes incredibly fluffy and soft muffins! Have a go at this recipe! :)

Ingredients;
200g of Cake Flour (Sifted),
65g of Brown Sugar,
1 Tsp of Vanilla Extract,
1 & 1/2 Tsp of Baking Powder,
1/2 Cup of Chocolate Chips,
60ml of Vegetable Oil,
25g of Oatmeal (Optional),
225ml of Milk,
1 Large Egg.

1. Whisk the dry ingredients in a large bowl until everything is thoroughly mixed through. (Cake Flour, Brown Sugar, Baking Powder and Oatmeal.)
2. In another large mixing bowl, whisk together the wet ingredients until combined. (Vanilla Extract, Vegetable Oil, Milk and an Egg.)
3. In 3 portions, add the Dry Ingredients to the Wet Ingredients until well mixed. Do not over mix otherwise your muffins will come out very dense (Bread Consistency)!
4. Add in your Chocolate Chips and gently fold it in.
5. Using an Ice-Cream scoop, scoop your muffins into a Muffin tin lined with Muffin Cases or into a Muffin Tin that is greased well. Bake at 180°C for 15-20 minutes or until a toothpick inserted into the center comes out clean!

Serve warm while the Chocolate is melted for the best muffins you've ever tasted!
